2 croissants
4 eggs
4 slices of ham
Tamarind chutney
Butter

Instructions:
1. Prep the Ingredients:
○ Crack the 4 eggs into a mixing bowl, add a pinch of salt, and whisk until fully combined.
○ Slice each croissant in half to create a pocket for the ingredients.
2. Toast the Croissants:
○ Add a bit of butter to a frying pan and lightly toast the croissants until golden brown on both sides.
○ Once done, plate them and set aside.
3. Spread the Chutney:
○ Spread a thin layer of tamarind chutney on the inside of each toasted croissant.
4. Cook the Eggs:
○ In the same pan, add a bit more butter.
○ Cook the eggs on low to medium heat, stirring gently to create soft, fluffy curds. Once cooked, remove from heat.
5. Assemble the Sandwich:
○ Add half of the cooked eggs onto the chutney-coated croissants (half the eggs per sandwich).
6. Cook the Ham:
○ IIn the same pan, cook 2 slices of ham for about 30 seconds on each side, until lightly browned (2 slices per sandwich).
7. Finish the Sandwich:
○ Place the cooked ham slices on top of the eggs inside the croissants.
8. Garnish and Serve:
○ Sprinkle a pinch of dried parsley flakes on top for a fresh finish.
